Pulled pork and slaw; Dennis Brown’s serving it up at Prudhomme’s

Columbia resident Dennis Brown is the featured subject in this Lancaster Sunday News article on July 10.

“Dennis Brown’s roots are in the Midwest, but his cooking is pure South.

“Which is appropriate, as he’s a line cook at Prudhomme’s Lost Cajun Kitchen, a Columbia landmark celebrating its 21st anniversary this year.

“Brown, 34, who hails from Crawfordsville, Ind., hasn’t been at Prudhomme’s that long — all of seven months. And his professional kitchen time is fairly new, too. But that’s OK with Brown. He’s doing what he wants to do.
