I’ve been craving Green Beans lately, but not necessarily as a hot side dish. No, what I’m thinking about is a cold Green Bean salad – something that features the crisp, yet tender texture of peak season Green Beans for summer picnicking. Cold Green Bean salads use the blanching method (boil for 3-4 minutes then immediately cool them in an ice-water bowl) to keep the beans firm and bright green. A recipe along these lines sounds refreshing, and these more advanced recipes look amazing too. Green Beans are in peak season on farms along the Eastern Seaboard. Enjoy!
