Green Bell Peppers
Supplies from Florida on thick-walled Green Bell Peppers are plentiful this week and prices are reasonable. The fresh flavor and crisp crunch of a Green Pepper is perfect for salads of all kinds. Here is a recipe that my wife and her mother make for many-a picnic. It’s light, crisp and fresh tasting and will get you excited for Spring and Summer!
RECIPE: Fresh and Green Macaroni Salad
- Rough chop 1 XL Green Pepper, 4 Mini Seedless Cucumbers and 1 Jumbo Sweet Onion (1 LG Seedless Cucumber or peeled regular Cucumber can be substituted for the mini’s)
- Boil 1 box of Elbow Macaroni for 5 minutes only
- Rinse par-boiled Macaroni with cold water to quick-cool
- Mix ¾ Cup Light Mayonnaise with a packet of Italian Dressing seasoning (about .7 oz)
- Stir chopped vegetables into Macaroni in a large bowl
- Stir seasoned Mayonnaise into the Macaroni and vegetables
- For best flavor and texture, allow salad to cool in the refrigerator for a few hours before serving

The yellow flesh gets deeper in color during cooking, and the flavor is rich. Gold Potatoes are ideal for boiling, mashing, scalloping and roasting. Yukon Golds, Butter Golds, Klondike Goldust… there are several varieties and I think they’re all pretty good! Gorgeous, tender-skinned new crop Gold Potatoes from Florida are now in peak season, plus storage Yukon Golds from Idaho are still fantastic too.
